The Real Deal French Onion Soup
alright, it’s not totally classic. our version uses a rich, brown chicken stock instead of the more traditional beef stock. we simmer caramelized onions with garlic, fresh thyme, a healthy dose of dry sherry and add the comforting mixture to the rich stock. it’s ladled into a crock, layered with buttered toasts and broiled with gruyere cheese. wow


Kabocha Curry Fritters
these savory little fritters highlight kabocha squash, an asian variety prized for their sweet, firm texture. we lightly flavor the fritters with a little of our house curry blend. they are fried until hot and crisp and served with kabocha romesco, an intriguing variation of the traditional spanish sauce


Pistachio Involtini With Pangrattata
involtini is an italian word for a small bite of food consisting of some sort of outer layer wrapped around a filling. here we use a juicy white fish and wrap it around pangrattata, a blend of toasted breadcrumbs with lemon zest, fresh herbs and a little sun-dried tomato. we dredge the involtini in crushed pistachio, roast in a hot oven and drizzle with lemon oil. wow

with verjus vinaigrette. one of my favorite late winter dishes. white fish is sauteed in a hot pan and served with a vinaigrette made from verjus, an unfermented grape juice. verjus offers a great alternative to citrus juice or vinegar in vinaigrette. our vegetable ragout includes wild mushrooms, pearl onions, edamame and fingerling potatoes


Pork Shank Redemption Version Ii
an heirloom berkshire pork shank is braised with spanish spices, cider and yellow springs s and g artisan distillery’s first product, apple pie moonshine. this delicious dish was a runaway hit when we tested it last december. smoked paprika, garlic and apm just rocks this meltingly tender braised pork shank. add our house made apple chutney, spiked with a little moonshine and pair with hard cider or teorema garnacha total redemption

with vanilla-infused brown butter. wonderful ravioli is stuffed with butternut squash and savory italian cheeses. served with roasted butternut squash, sautéed spinach, toasted walnuts and a nutty, aromatic, vanilla brown butter
