L’Effervescence
L'Effervescence is a French word, which has the literal meaning such as liveliness & bubbles & also includes figurative meaning such to make something happen. A place where people can revitalize, that is what a restaurant should be. To make people smile through food.
Chef Shinobu Namae learned his trade from two of the world greatest chefs in Michel Bras and Heston Blumenthal, and their influence is clear to see at L'Effervescence. Blending contemporary French cuisine with playful gastronomic twists that stimulate the senses, Namae dishes also have their own distinct character thanks to the use of premium Japanese ingredients.
There is plenty of effervescence in creations such as an idea of apple pie a playful reworking of the famous McDonald's fast-food product, served in a little red takeaway box at the table. The filling changes constantly, but has featured combinations such as wild boar, sage and matutake mushrooms. Michel Bras love of vegetables is also shared by Namae, who showcases fabulous organic produce in dishes such as whole cooked turnip, accompanied by parsley oil emulsion, Basque ham and brioche.
